The next leafy green I’m going to eat is Kale- massaged and added into my salad to start. I also like to add the tops of my root veggies into soups and stews when I can buy them attached. I’m curious to try chicory as a leafy green.

Also I find standing greens in vases of water in the refrigerator keeps them crisp for at ;east a week
