A few months ago I started grinding wheat berries at home. Mostly using Einkorn, hard or soft white wheat, Kumute, some rye. I am still on learning curve so about half the time use KA flour with the freshly ground flour as I get used to the freshly ground flour. I also am using it in my sourdough bread recipes. I love the flavors!

I use stone ground organic wheat and rye flour sour dough. I make a Danish rye bread with organic cracked rye kernels, hemp hearts, flax seeds (lightly ground), chia seeds, pumpkin seeds and caraway seeds. Rye only. I also make a sourdough with stone ground organic wheat and a little bread or all-purpose flour. (Not more than 25%white flour and always stone ground and organic) . My starters are usually rye occasionally wheat always organic. I will be experimenting with using more starter and reducing use of any white flour. The Danish rye is awesome! With 50% of the bread weight being the added ingredients. A meal in itself.

I use organic unbleached flour for baking & making sourdough bread. Small quantities of rye as well, almond flour, chickpea flour & rice flour for coating tofu before frying it.
