Yes, I do like casseroles. My recipe for a healthier casserole is Merliton Casserole. It is made from *4 chayote squash peeled(wear gloves or you will get a great exfoliation of the hands) remove the seed & diced it into medium size chunks
* 3 tablespoons extra virgin olive oil
* 8 tablespoons vegan butter
* 1 medium onion, diced
* 2 green onions, chopped
* 1 stalk celery, diced
* Fresh parsley leaves, chopped
* Half green bell pepper, seeded and diced
* 2 cloves garlic, minced
* Tony Chachere’s Creole seasoning & cayenne pepper
* Liquid smoke
* bread crumbs
* 2 cups vegetable stock
* Salt and black pepper to taste

DIRECTIONS
1. Preheat the oven to 350 degrees.
2. Peel, Cube & Boil mirliton until soft(consistency of mash potatoes). While the mirliton is cooking, go to step 3.
3. Melt the butter in a large skillet over moderate heat. Add the green onion, onion, celery, parsley and bell pepper and cook until the onions are translucent, about 5 minutes. Add the garlic and cook for another minute.
4. Mash mirliton in a large mixing bowl then add the ingredients from the skillet
5. Add stock and season with Creole seasoning, cayenne, salt and pepper. Stir to combine.
6. Add just enough bread crumbs to prevent dressing from being soggy. It may take up to 4 cups. Mix well.
7. Spoon the dressing into a large buttered baking dish and bake until golden brown, approximately 30-40 minutes.
8. Enjoy

However, I cannot eat most of them. The problem with most of the FRN recipes is they contain the nightshade vegetables and wheat. I cannot eat (tomatoes, green and hot peppers, white potatoes, and eggplant) without aggravating the pain and swelling of arthritis in my hands, and my eating gluten causes digestive issues. In the future, could you feature recipes without nightshade, vegetables, and gluten?
