Unfortunately, wholegrain sushi rice isn’t widespread available. But once in a fortnight it won’t really be an issue to eat sushi rice and I haven’t tried a brown sushi rice variety myself yet. I love the hosomaki avocado kind the most!

We use it to replace fish in sushi. We also crumble up those dried seaweed snack sheets and put them in the rolls.

We ordered amazing vegan sushi platters from Wellness Sushi, a vegan sushi restaurant in Denver. Even avowed meat and fish eaters loved their beautiful, colorful, flavorful sushi! Cooked, mashed and flavored Jackfruit was one of the fillings. Tofu, veggies (raw and cooked) and crispy fried onions were among the array of ingredients. We were happy to say that no fish were killed to make the sushi. Highly recommended!

It’s made with a nori, brown rice (I don’t eat white) veggies, sesame seeds and either tofu or tempeh. Did I forget something? I prefer the ones with tempeh, because it’s the only tempeh I’ve eaten that I actually like, and I eat tofu often enough.

Amazing. Tempura or air fried sweet potato are great in rolls or handrolls. You can do great things with tofu (inari) is so tasty. Have fun with it.
