I tried the broccoli salad made with the cashew dressing. It’s a keeper. DELICIOUS. And we finished it for dinner AND thinned it for an equally great side salad. Thank you. Keep the recipes coming!

Some people believe in celebrating with no food for them – being religious. I’m pretty sure ramadan is that way too. Well wherever I celebrated, most places wanted to go the no food route – so I really don’t know anything. All of the holidays these days involve me celebrating by creating databases of vegan foods – to figure out how to celebrate!

St Patrick’s Day is coming up. I’d like to know what is involved with this holiday. Actually the main holiday that has research past my capacity’s New Year’s. Too many variations, it’s too hard. If anyone can help – I’d be glad!

Thanksgiving’s the only exception. Even when I ate meat, my thanksgivings were usually vegan. So based on what I see, I believe I know more about vegan thanksgivings than anyone else around! Wow.

I heard kwanzaa’s a vegan holiday. We can really get inspired by that for what to eat.

The last holiday I researched was Wigilia – trying to figure out old polish dishes that were vegan long ago.

I’ve researched so many holidays and even created my own. In terms of my own self-created vegan holidays – the last holiday I researched was my own – the horse freedom day that’s the same day as the kentucky derby – where people can do the festivities without the horseracing element – from non-alcoholic mint juleps to roses.

For potatoes – instead of adding butter – they say yellow potatoes have the butter built in. I take it a step further with redskin yellow inside potatoes – for the bacon built in too.

For mac n cheese – my go-to alternative’s butternut squash. So I do mac n butternut – and yes, adding in something like broccoli keeps it from getting boring.

I’m going to take this to be a thanksgiving side dish list, as I usually associate these with that. I’ll eat typically a side of corn, peas, mixed veggies (corn, carrots, peas), etc. Wild rice mixed with some cranberries and hazelnuts is one I didn’t see on the list that’s a great one. Cornbread. There’s something called corn butter – I never tried, but would be interested in it. Another’s acorn bread with acorn butter.

If we go the hanukkah route – and you do eat something – for latkes – there’s all sorts of sides. One of the underrepresented ones is horseradish. I think it should work as a nice replacement for sour cream.
