I don’t eat them as often as I should, but that’s about to change. I live in a food desert of sorts, there are only two varieties of sweet potatoes available to choose from. I never knew there was more than 100 varieties available in this country.

Hi Drew, Thank you for your question, and we love that sweet potatoes are such a staple for you!

The good news is that microwaving is actually one of the better cooking methods from a nutritional standpoint. Because it cooks quickly and uses little to no water, it tends to preserve heat-sensitive nutrients like vitamin C and certain B vitamins better than boiling or prolonged oven cooking. There is no credible scientific evidence that microwave cooking damages food in any harmful way or creates nutritional concerns beyond what any other cooking method involves.

Keeping the peel on is also a great instinct, as much of the fiber and many of the nutrients in sweet potatoes are concentrated in or just beneath the skin.
So you are doing wonderfully on both counts. No nutritional objections at all, and microwaving deserves far more credit than it typically gets as a quick, efficient, and nutrition-friendly cooking method. –Ina, Food Revolution Network Team
