I make sure they’re dry and pack them loosely in a hard container so I can reach in and take out what I need.

Then add enough EVOO to pull the herbs together without soaking them. I spoon into ice cube trays that I reserve just for herbs or add by teaspoon or tablespoon measures to a parchment lined tray. Freeze, then pop into a freezer safe container, label and store in a special container just for herbs. This is so handy while cooking to just pull what I need from the freezer and pop into the recipe. Herbs are nearly as beautiful and fresh as the day I harvested.
