I make teriyaki stir fry but instead of lits of oil I use a oil sprayer which just coats the pan with the oil and the tofu cooks nicely without a lot of oil.

This is one of the most persistent myths in nutrition and it is really worth unpacking properly!

The key thing to understand here is that tofu and soy contain phytoestrogens called isoflavones, which are naturally occurring plant compounds that interact very weakly with estrogen receptors in the body. These are fundamentally and importantly different from xenoestrogens, which are synthetic chemical estrogens found in pesticides, plastics and industrial chemicals that genuinely do disrupt hormonal function. Lumping these two very different things together is where this myth really falls apart.

What is also fascinating is that when we look at populations who have eaten soy regularly throughout their lives — particularly in Japan, China and other Asian countries — we actually see consistently lower rates of breast, uterine and reproductive cancers compared to Western populations who eat little or no soy.

On the fibroid concern specifically, the evidence simply does not support soy as a contributing cause. In fact some research suggests that isoflavones may actually be protective by occupying estrogen receptors and blocking more potent forms of estrogen from binding to them.

If we are genuinely concerned about substances that mimic estrogen in harmful ways, the real culprits are much closer to home — conventional meat and dairy products, plastics, pesticides and many everyday household chemicals are far more significant sources of true hormonal disruption than a block of organic tofu ever could be. Enjoyed in moderation as part of a varied whole food plant based diet, tofu is a really wonderful and safe food. –Ina, Food Revolution Network Team

Or more realistically, with the mic too far from the speaker in a room consisting entirely of hard, sound-reflective surfaces. FRN might want to consider investing in a better microphone or, ideally, a headset-type or lavalier microphone, to eliminate the annoying high-frequency acoustics and echo effect of this kitchen.

I use a package of soft tofu, approximately 1/3 – 1/2 cup of raw cashews (soaked if needed), fresh lemon juice from 1/2 lemon, 1/2 tsp. vanilla, and 1-2 tbsp. maple syrup. Put ingredients in a high speed blender and then let cool in the fridge. You can adjust the ingredients to your liking and add others for taste such as cinnamon, fruit, dried fruit powder, protein powder etc.
