Thank you for the question, Shirley! We do have a recipe for Lentil Flax Loaf, in which the primary grain is oats. It’s not directly a turkey substitute, but can certainly be made as a main course “meatloaf.” Here’s that recipe– I hope you are able to try it!

It didn’t occur to me to celebrate the American Thanksgiving (I’m German, my husband and son are American) here, and most definitely not with a turkey ever since I looked straight into one turkey’s eyes passing a big truck they were on (that look in his eyes will be imprinted in my brain for the rest of time). Now that I have your recipes, I just told my husband that we’ll be having a Thanksgiving dinner this year. Thank you for doing this!

I make stuffing with cooked rice (brown or basmati or Jasmine), celery, raisins or dried cranberries or cut up prunes, olive oil, garlic and nuts like walnuts or pecans. It’s the herbs that help make it a Thanksgiving tasting side. You can use thyme, sage, parsley and a little rosemary if you like it. You can add cremini mushrooms if you like, too. Stir-fry the veggies together with the rice and serve it all mixed up and baked in an oiled dish (eg., Corelle or other baking dish) for 30 minutes at 375 degrees. Tastes great. I do not measure things precisely. About 2-3 cups of cooked rice, a few stalks celery, 3 cloves garlic, and a handful of parsley chopped and about a tablespoon of the other chopped herbs. I add things together until they look right to me. Sorry I do not have precise amounts. You can do this to your liking.

Took a little bit of time, but worth the effort. Couldn’t find tempeh, so I used a plain (unseasoned) plant based sausage instead. Looking forward to eating the leftovers for lunch tomorrow.
