I once planted it in a really big pot and then went on a trip. When i returned, the jicams roots had grown so big that they had broken the pot .

The problem is that it is very hard to find good quality. I throw away a lot of them when cutting them reveals brown and bad tasting flesh . I stoped buying them , it is great pity!

We served it as raw sticks or rounds with lime juice. Now days, jicama is easier to buy in the western US, but finding organic jicama can be a challenge. It was fascinating to learn how it grows as well as all the nutrients you cited in your article. Thank you for sharing so many details and recipes.
