I ditched traditional American breakfast about 2 years ago and live beans for breakfast. Easy! Any bean, leftover veggies (we intentionally make extra), broth and spice.

I was trying to come up with a way to add legumes, so I added cooked navy beans, chickpeas, or lentils into the Vitamix with banana, cinnamon, dates and vanilla, and then made them into large ice cubes and then add a cube to my oatmeal! Yum!

I love beans. I like to try different ones. When your low income they are a great inexpensive meal. I can eat a bowl of brown rice, beans, and veggies.

I add black beans to my chocolate or blueberry protein shakes; chickpeas to my peanut butter protein shake; white beans to vanilla or banana shakes … you get the idea.

Thank Bridgett. I never thought of using a “flax egg” as a binder in legume patties. What a nutritional boost.
