Cooling Watermelon Gazpacho

Sweet and savory fans, this one’s for you! Slightly sweet watermelon combined with naturally salty cucumber plus tart lime and refreshing mint will have you dancing around your kitchen wondering where this flavorful combo has been all your life! Pro tip: the flavors are even better the next day, so make it the day before you plan to enjoy it.

¾ cup watermelon juice (from fresh watermelon)
½ cup cucumber juice (from fresh cucumber)
¾ cup cucumber (peeled, seeded and diced)
¼ cup organic red bell pepper (diced)
1 cup watermelon (small cubes)
2 tbsp shallot (minced)
3 tbsp mint (thinly sliced)
1 tbsp red wine vinegar
2 tbsp lime juice (freshly squeezed)
¼ tsp salt (optional)

Either juice your watermelon and cucumber or blend them individually and strain them each through a sieve to get ¾ cup watermelon juice and ½ cup cucumber juice.

In a mixing bowl, add the juices, cucumber, bell pepper, watermelon, shallot, mint, vinegar, and lime. Stir gently to mix all ingredients.

If using, stir in the salt.

Top with additional lime juice or mint upon serving, if desired.
