And before the pandemic, this was divided almost exactly in half between food consumed at home and food purchased away from home. Of course, these numbers may be higher or lower depending on where you live, your household income, the costs of food and living in your community, how many people live in your home, your financial context, and your eating habits.<\/p>\n<p>But these days, people are eating at home more than they have in a long time. With so many people out of work and struggling to make ends meet, the need for healthy recipes using inexpensive ingredients is greater than ever.<\/p>\n<p>If you\u2019re concerned about feeding your family, then spending extra to eat healthy may feel like a luxury you just can\u2019t afford. But the good news is you don\u2019t have to choose between nutritious food and affordable food. You can eat healthfully \u2014 and actually save money in the process. There are many tools and applications that can help with budgeting (like the ones listed <a href=\"https:\/\/www.cnet.com\/personal-finance\/the-best-budgeting-apps\/\">here<\/a>). If money\u2019s tight, then budgeting is even more important, so you can have accurate information about where you stand \u2014 and can make the best choices about how to allocate the limited resources you have to work with.<\/p>\n<p>There are a few specific tools that might be helpful to you in creating or clarifying your household food budget. One is the <a href=\"https:\/\/www.fns.usda.gov\/cnpp\/usda-food-plans-cost-food-reports-monthly-reports\">USDA Food Plans<\/a>. These are cost of food reports that the USDA puts together on a monthly basis, representing a nutritious (at least as defined by the USDA) diet at four different cost levels. Of course, costs vary tremendously in different states and nations, but this can give you a sense of what the USDA is estimating based on national averages in the United States.<\/p>\n<p>Using the <a href=\"https:\/\/fns-prod.azureedge.net\/sites\/default\/files\/media\/file\/CostofFoodJun2020.pdf\">most current data<\/a> as of this writing, <b>the USDA estimates that the average family of four can eat a nutritious diet for as little as $500 a month for a low-cost plan, and up to $800 a month for a more liberal one.<\/b> The plans assume some level of meat and dairy consumption, as well as a preference for prepared foods over cooking from scratch, so it\u2019s entirely possible to feed your family a nutritious diet at the low end of that range without animal products. The first is caloric, and the second is nutritional.<\/b><\/p>\n<p>If someone doesn\u2019t get enough calories, their body will eventually starve. For hundreds of millions of people in the world, that\u2019s the gravest dietary danger. And it\u2019s a formidable one. If eating at all is priority number one, then anything available and edible becomes better than nothing. And many people who are on the edge of starvation base their diets around white flour, low-quality bottled oils, added sugars, processed and fried meats, and other highly processed foods. This is one of the primary reasons that a host of health problems, from obesity to type 2 diabetes to cardiovascular disease, tend to be highest <a href=\"https:\/\/www.cdc.gov\/pcd\/issues\/2016\/16_0088.htm\">among low-income communities<\/a>.<\/p>\n<p>But the next food value metric to look at is nutritional. Highly processed foods may be a cheap source of calories, but they tend to be nearly devoid of the vitamins, minerals, fiber, flavonoids, antioxidants, and other nutrients that are critical to your health.<\/p>\n<p>Dr. Joel Fuhrman created the <a href=\"https:\/\/www.drfuhrman.com\/elearning\/eat-to-live-blog\/128\/andi-food-scores-rating-the-nutrient-density-of-foods\">ANDI<\/a> (aggregate nutrient density index) food score to identify the most nutrient-dense, healthy plant foods. The ANDI system determines the healthfulness of common foods based on how much nutrition you\u2019ll get per calorie. Specifically, the ANDI score is based on 34 important nutritional parameters and ranks all foods on a scale from 1 to 1000. A score of 1000 belongs to the most nutrient-dense foods, such as green leafy vegetables like kale, collards, and mustard greens.<\/p>\n<h2>Best Foods for Eating Plant-Based on a Budget<\/h2>\n<p>The ANDI score doesn\u2019t reference the costs of the foods, though, so you\u2019ll need more information to maximize the nutritional power of each dollar. Our team did some digging, and using both the ANDI scores and the <a href=\"https:\/\/www.agmrc.org\/commodities-products\/vegetables\">Ag Marketing Resource Center<\/a> to evaluate commercial food prices, we came up with a list of some of the least expensive, healthiest plant foods. Here they are, in no specific order.<\/p>\n<ul>\n<li>Legumes, including <a href=\"\/blog\/benefits-of-beans\/\">beans<\/a>, peas, and lentils. Purchasing dry in bulk is the most economical option. But canned legumes is another good option that can be relatively inexpensive.<\/li>\n<li><a href=\"\/blog\/are-grains-good-for-you\/\">Whole grains<\/a> (including rice, oats, wheat, and corn) and pseudograins (such as millet, amaranth, quinoa, and buckwheat)<\/li>\n<li>Carrots<\/li>\n<li>White and red <a href=\"\/blog\/are-potatoes-healthy\/\">potatoes<\/a><\/li>\n<li><a href=\"\/blog\/sweet-potato-health-benefits\/\">Sweet potatoes<\/a><\/li>\n<li>Cabbage<\/li>\n<li>Tofu (to avoid GMOs, aim for organic <a href=\"\/blog\/the-truth-about-soy\/\">soy foods<\/a>)<\/li>\n<li>Broccoli<\/li>\n<li>Cauliflower<\/li>\n<li>Lettuce<\/li>\n<li>Cantaloupe<\/li>\n<li><a href=\"\/blog\/are-bananas-good-for-you\/\">Bananas<\/a><\/li>\n<li><a href=\"\/blog\/corn-health-benefits\/\">Sweet corn<\/a>, especially when purchased on the cob (Again, choose organic to avoid GMOs.)<\/li>\n<li>Sunflower seeds<\/li>\n<li>White button <a href=\"\/blog\/health-benefits-of-mushrooms\/\">mushrooms<\/a><\/li>\n<li><a href=\"\/blog\/what-is-nutritional-yeast\/\">Nutritional yeast<\/a><\/li>\n<li>Flax seeds<\/li>\n<\/ul>\n<p>All of these foods are nutrient-dense, versatile, and fit in easily to a plant-based diet without breaking the bank. Keep in mind that you may be able to save money by purchasing fresh produce during its peak growing seasons, buying <a href=\"\/blog\/food-storage-food-preservation\/\">frozen produce<\/a> (yes, it\u2019s still super nutritious), or <a href=\"https:\/\/foodrevolution.org\/blog\/food-garden-to-combat-food-supply-anxiety\/\">growing your own<\/a>.<\/p>\n<p>You may have noticed that prepared foods aren\u2019t on this list \u2014 and neither are restaurant meals. While it\u2019s nice to have some of these convenient options at times, and lovely to support local restaurants when you can, the truth is that when it comes to saving money and eating well, your best bet is to prepare as much of your food as possible. If they have produce that hasn\u2019t sold during the normal market hours, they may be happy to sell it to you at a significantly reduced cost, rather than having to pack it up and take it home.)<\/li>\n<li>Online, especially through retailers that specialize in bulk food sales (like <a href=\"https:\/\/nuts.com\/wholesale\/nuts\/organic\/\">nuts.com<\/a>)<\/li>\n<\/ul>\n<h3>If You Need Food Assistance<\/h3>\n<p>For people in the US who are looking for food assistance, there are a few resources to consider. One of these is SNAP\/EBT (also known as food stamps), which will cover many whole plant foods purchased at grocery stores and markets. In fact, the <a href=\"https:\/\/www.fns.usda.gov\/snap\/eligible-food-items\">SNAP<\/a> website states you can use it to buy any food for the household that includes fruits and vegetables, breads and cereals, snack foods, and seeds and plants that produce food for the household to consume. SNAP can also be <a href=\"https:\/\/www.fns.usda.gov\/snap\/online-purchasing-pilot\">used online<\/a> for purchases made through vendors like Amazon and Walmart in a program called the SNAP Online Purchasing Pilot.<\/p>\n<p>The <a href=\"https:\/\/www.fns.usda.gov\/fmnp\/wic-farmers-market-nutrition-program\">WIC Farmers Market Nutrition Program<\/a> (FMNP) is another resource that serves women, infants, and small children. It was created to provide participants with fresh, unprepared, locally grown fruits and vegetables, as well as to expand the use of farmers markets. To use this program, WIC participants are given coupons to buy eligible food at farmers markets or roadside stands that are approved to accept the coupons.<\/p>\n<p>Food banks are another resource. Although not typically known for offering the healthiest fare, some enable users to choose the foods they want to take, out of a wide range of options. These nonprofit, charitable organizations are intended to provide free basic foods for those in need of extra support to avoid hunger. To find a food bank near you, go to <a href=\"https:\/\/ampleharvest.org\/\">AmpleHarvest.org<\/a> or <a href=\"https:\/\/www.feedingamerica.org\/find-your-local-foodbank\">FeedingAmerica.org<\/a> where you can search for locations in your area. Feeding America also has a <a href=\"https:\/\/hungerandhealth.feedingamerica.org\/\">Hunger and Health Initiative<\/a>, aimed at improving health outcomes in low-income communities.<\/p>\n<p>In recent months, food banks have been stretched like never before, as tens of millions of people have leaned into them, many for the first time, in order to stay afloat in these difficult times.
