A <a href=\"https:\/\/nida.nih.gov\/research-topics\/anabolic-steroids\">short list<\/a> of their dangerous side effects includes \u201cearly heart attacks, strokes, liver tumors, kidney failure, and psychiatric problems.\u201d<\/p>\n<p>But <a href=\"https:\/\/pdf.sciencedirectassets.com\/782859\/1-s2.0-S0022316601X31039\/1-s2.0-S0022316622147760\/main.pdf\">one of the first performance-enhancing substances<\/a>, which dates back to the building of the pyramids in Egypt and the original Olympic Games in Greece, not only helped <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/11238795\/\">laborers<\/a> and athletes do better in their immediate tasks, but also may have improved their health long-term. I\u2019m talking, of course, about garlic. (Imagine how easy it would have been to catch athletes who used it \u2014 the world\u2019s first breathalyzer test.)<\/p>\n<p>The health properties of garlic were at least as well known as its ability to fortify those engaged in heavy exertion. Garlic was <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/11238795\/\">in use<\/a> in Ancient Egypt and Greece. Medical texts from these times in Egypt, Greece, Rome, China, and India <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/11238795\/\">prescribed<\/a> medical applications for garlic. And there are Biblical references to garlic, too.<\/p>\n<p>So if you want to tap into the superpowers of this amazing edible bulb, where do you start? It grows underground in the form of a bulb composed of individual sections.<\/p>\n<p>In the kitchen, <strong>the bulb is known as a \u201chead\u201d of garlic, while each section is known as a \u201cclove.\u201d<\/strong> Do not confuse this with the spice called \u201ccloves,\u201d or else you may become famous for your pumpkin pie and mulled wine \u2014 not in a good way.<\/p>\n<p>Chefs and home cooks from many lands and cuisines use garlic for its aroma and taste. It\u2019s a flavor and aromatic powerhouse that brings life to dishes from soups to stir-fries to pasta to sauces.<\/p>\n<p>And boy, is garlic good for you! Its <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6989317\/\">prebiotic fiber<\/a> and <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC8362743\/\">bacteria-fighting phytonutrients<\/a> both add serious nutritional boosts to your diet.<\/p>\n<h3>Types of Garlic<\/h3>\n<p>There are actually a couple of main types of garlic: <a href=\"https:\/\/www.gardeningknowhow.com\/edible\/herbs\/garlic\/different-types-of-garlic.htm\">softneck and hardneck<\/a>.<\/p>\n<p><strong>The type of garlic you will usually encounter in the supermarket is the softneck variety, which gets its name from its soft, pliable stalk.<\/strong> It produces more cloves (which are enclosed in delicate, papery skin) than the hardneck variety, and has a more <a href=\"https:\/\/www.masterclass.com\/articles\/all-about-garlic-benefits-and-uses-plus-easy-roasted-garlic-recipe#5oroodXCUcC9ID7UQGXLO0\">subtle flavor<\/a>. (But hey, it\u2019s still garlic, so \u201csubtle\u201d is relative. If you add some to breakfast muffins, it will be noticed.)<\/p>\n<p>Hardneck garlic, named for its woody central stalk, has a bolder, spicier garlic flavor. You may find it more frequently at farmers markets. In the springtime, a variety known as garlic scapes may also make an appearance at these markets. Green with a curly stem, scapes taste similar to green onion varieties such as scallions and chives.<\/p>\n<p>The flavor of garlic can morph depending on how it\u2019s prepared. When raw, it can be pungent and slightly spicy. In addition to prebiotic fiber that makes your microbiome jump for joy, <strong>garlic is also loaded with <a href=\"https:\/\/tools.myfooddata.com\/nutrition-facts\/169230\/wt4\/1\">vitamins and minerals<\/a> such as vitamin C, B6, zinc, and manganese.<\/strong><\/p>\n<p>But garlic\u2019s unique claim to fame may be its treasure trove of antioxidant, antibacterial, and anti-inflammatory phytonutrients. Two of the most potent and best-studied are <a href=\"\/blog\/allium-vegetables\/\">allicin<\/a> and <a href=\"\/blog\/what-are-flavonoids\/\">flavonoids<\/a>. (If you were into new wave music in the late 1970s and you\u2019re humming Elvis Costello\u2019s \u201cAlison\u201d at this moment, I totally get it.)<\/p>\n<h2>Three Ways to Easily Peel Garlic<\/h2>\n<p>Of the great cultural advances of the last 50 years, perhaps the most exciting is the invention of an easy way to peel the sticky papery skin off a clove of garlic. When I was getting my early culinary education, there was an entire cottage industry of products that promised to separate the clove from the skin quickly without making your hands smell like, well, a garlic factory.<\/p>\n<p>Now, thanks to social media and my own extensive testing, I can confidently present to you <strong>the most popular and efficient way to peel garlic:<\/strong><\/p>\n<ol>\n<li>Begin by breaking the head of garlic into separate cloves.<\/li>\n<li>Next, place the \u201cclove of honor\u201d (the first one you want to peel) on a cutting board. Position the flat side of your knife blade on top of the clove, holding the handle firmly. Here are some of <strong>the top ways to cut garlic<\/strong>:<\/p>\n<ul>\n<li><strong>Slice<\/strong>: Use a rocking motion with your knife to make thin slices.<\/li>\n<li><strong>Chop<\/strong>: Move the blade back and forth over your slices to roughly chop garlic.<\/li>\n<li><strong>Mince<\/strong> (finer than chopped): Using a two-handed chopping motion, run your knife over the garlic repeatedly to mince it into fine bits.<\/li>\n<li><strong>Grate<\/strong>: Rub the clove up and down against a <a href=\"https:\/\/amzn.to\/490tZyE\">grater<\/a>, making a fine mince.<\/li>\n<li><strong>Crush<\/strong>: Lay the flat side of your <a href=\"\/zwilling-gourmet8inchchefsknife\">chef\u2019s knife<\/a> over the clove while holding the handle. Using the heel of your other hand, smash the blade down firmly on the clove until crushed. Or use a <a href=\"\/oxo-goodgripsgarlicpress\">garlic press<\/a>.<\/li>\n<li><strong>Knife blade puree<\/strong>: Roughly mince the garlic, then with the side of the blade\u2019s edge, press down to crush the bits into a puree.<\/li>\n<\/ul>\n<p>One thing about garlic is that <a href=\"https:\/\/www.foodmatters.com\/article\/why-you-should-rest-your-chopped-garlic-5-minutes-cooking\">allicin<\/a>, the compound that gives garlic its distinctive aroma (and much of its health punch), remains dormant until the garlic is cut or crushed. Possibly this is because its purpose is to gross out predators who would otherwise gobble garlic to extinction for its nutritional benefits. In any case, if you want the maximum health impact, <strong>allow cut garlic to rest for five to ten minutes after cutting or crushing the cloves<\/strong>. This activates the enzyme alliinase, which in turn activates the allicin.<\/p>\n<p>If you don\u2019t have a kitchen timer and you enjoy 1970s new wave music, you can simply play Elvis Costello\u2019s \u201c<a href=\"https:\/\/www.youtube.com\/watch?v=C9GlC9GyF4Y\">Alison<\/a>\u201d two or three times while you wait for the allicin to come online. If you\u2019re more of a 90s fan, <a href=\"https:\/\/www.youtube.com\/watch?v=8k_CBproQZA\">Green Day\u2019s cover<\/a> is shorter, so you\u2019ll need to play it three to four times while you contemplate the miracle of enzymes and phytonutrients.<\/p>\n<h2>How to Purchase and Store Garlic<\/h2>\n<p>The garlic you peel, chop, and cook with is only as good as the garlic you buy. When purchasing heads, look for bulbs that are firm and plump to the touch. Avoid heads that are spongy or soft, or ones that have dark spots or mold.<\/p>\n<p>Once home, store garlic at room temperature in a cool dark place with good air circulation. A pantry or a counter in a corner of the kitchen that doesn\u2019t get direct sunlight are good spots, especially in fall or winter. <strong>During the colder, darker times of year, a head of fresh garlic could last 4\u20136 months<\/strong>, although I\u2019m sure I\u2019ve never let one hang around that long.<\/p>\n<p><a href=\"https:\/\/www.stilltasty.com\/fooditems\/index\/17241\">Garlic powder<\/a>, which you can get at pretty much any supermarket or convenience store, can last 3\u20134 years. If your recipe calls for fresh cloves and all you have is powder, <strong>the substitution is \u215b teaspoon per clove<\/strong>. Raw garlic can be used in recipes as follows:<\/p>\n<ul>\n<li>infused in oils<\/li>\n<li>added to dressings and sauces<\/li>\n<li>used as a spice rub for tofu or tempeh<\/li>\n<li>crushed on top of salads and grain bowls<\/li>\n<li>blended into juices and smoothies<\/li>\n<li>topping for bread<\/li>\n<li>pickled or <a href=\"https:\/\/www.greatbritishchefs.com\/recipes\/fermented-garlic-recipe\">fermented<\/a><\/li>\n<\/ul>\n<p>And cooked garlic can be saut\u00e9ed, <a href=\"https:\/\/www.reluctantgourmet.com\/how-to-sweat-vegetables\/\">sweated<\/a>, or <a href=\"https:\/\/www.wikihow.com\/Caramelize-Garlic\">caramelized<\/a> (to release the natural sugars \u2014 but again, resist the urge to add them to chocolate chip cookies).
