Now, there are dozens of different types of tofu, from firm to silken to smoked to shredded to baked. And each one has qualities that make it suitable for different uses.<\/p>\n<p>Despite its simplicity, tofu can be a bit of a mystery to those who haven&#8217;t cooked with it before. (\u201cIs it Jell-O? Is it a sponge?\u201d) How do you determine which one to use and how to use it?<\/p>\n<p>In this guide, I\u2019m going to demystify tofu for you. It\u2019s got a smooth texture, kind of like cheese, but unless it\u2019s <a href=\"https:\/\/www.atlasobscura.com\/foods\/stinky-tofu\">fermented<\/a> or marinated, tofu doesn\u2019t have much taste on its own.<\/p>\n<p><strong>Tofu is made by <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC9410752\/\">coagulating soy milk<\/a> with salts (e.g., calcium sulfate, magnesium chloride and calcium chloride; plain tofu is a low sodium food).<\/strong> The more water pressed out, the harder the tofu.<\/p>\n<p>Tofu <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6250531\/\">originated<\/a> in China at least 2,000 years ago, and its use quickly spread across many Asian regions and cuisines.<\/p>\n<p>Tofu and other whole soy foods have nutritional and health benefits, a fact often obscured by misinformation generated by the meat and dairy industries.<\/p>\n<p>To learn more about soy nutrition, health benefits, and myths, check out our comprehensive article: <a href=\"\/blog\/soy-facts-is-soy-healthy\/\">\u200b\u200b<i>Soy Facts: Is Soy Healthy or Harmful?<\/i><\/a><\/p>\n<h2>Types of Tofu<\/h2>\n<p>While there are many different flavors and styles of <a href=\"https:\/\/www.seriouseats.com\/shopping-cooking-guide-different-tofu-types\">tofu<\/a>, six basic types are distinguished by how hard they are \u201cpressed\u201d (if at all) from curds into blocks.<\/p>\n<p>The <strong>types of tofu include:<\/strong><\/p>\n<ul>\n<li>Silken tofu<\/li>\n<li>Soft tofu<\/li>\n<li>Medium-firm tofu<\/li>\n<li>Firm tofu<\/li>\n<li>Extra-firm tofu<\/li>\n<li>Super-firm tofu<\/li>\n<\/ul>\n<p><strong>Silken tofu<\/strong> is hardly pressed \u2014 more like gently shaped into a block. It has a custard-like texture and is very soft. You might have seen small squares of silken tofu in miso soup. Several plant-based desserts also use silken tofu as a base. <span style=\"font-weight: 400;\">This is usually the kind of tofu that you\u2019ll see sold in aseptic shelf-stable packaging.<\/span><\/p>\n<p><strong>Soft tofu<\/strong> is somewhat pressed, releasing more water. It\u2019s often added to soups and stews.<\/p>\n<p><strong>Medium-firm tofu<\/strong> is harder but still crumblier than firmer types, making it a good scrambled egg substitute.<\/p>\n<p><strong>Firm tofu<\/strong> is pressed harder and can be cut into cubes, strips, cutlets, and other shapes for baking, air-frying, or stir-frying.<\/p>\n<p><strong>Extra-firm tofu<\/strong> is similar to firm tofu but has less water due to more intense pressing. It\u2019s chewier than firm tofu, too, and is the type most commonly used as a <a href=\"\/blog\/plant-based-meat-alternatives\/\">meat alternative<\/a>.<\/p>\n<p><strong>Super-firm tofu<\/strong> uses the least water and the most protein. If you were rocking a plant-based lifestyle back then, you might remember the five-gallon buckets, irregular blocks of tofu, and large metal tongs.<\/p>\n<p>Now, most regular grocery stores and supermarkets carry at least one or two tofu varieties, a testament to the increasing popularity of plant-based foods. It\u2019s also widely available in the grocery sections of big-box stores, like Target and Walmart.<\/p>\n<p><strong>If you\u2019re looking for specialty tofu varieties, Asian grocery stores and markets may still be your best bet.<\/strong> And shelf-stable tofu can be found online or in stores. The most commonly available brand in the US is called <a href=\"https:\/\/morinaganutrition.com\/\">Mori-Nu<\/a>.<\/p>\n<p>Pro tip: Look for certified organic tofu to avoid <a href=\"\/blog\/what-is-a-gmo-bioengineered-food\/\">bioengineered<\/a> (GMO) soy. In 2024, about 96% of all soybeans planted were <a href=\"https:\/\/ers.usda.gov\/sites\/default\/files\/_laserfiche\/Charts\/58020\/biotechcrops2024_d.html?v=65891\">genetically modified<\/a>, so the odds are any non-organic tofu will have come from GMO soybeans. That said, much of the GMO soy is grown for animal agriculture, which is another reason to enjoy organic tofu in place of meat.<\/p>\n<h2>How to Store Tofu<\/h2>\n<p>Shelf-stable tofu can go in your cabinet and sit there (it will remain shelf-stable until at least the expiration date on the box, which is often a year or more past the date of manufacture).<\/p>\n<p>For other tofu types, the clock starts ticking even before you open the package. <strong>Unopened, <a href=\"https:\/\/tofubud.com\/blogs\/tips\/how-long-does-tofu-last\">tofu can last<\/a> for about a month or two in the refrigerator.<\/strong> But to be safe, go by the \u201cuse by\u201d or \u201cbest by\u201d date on the packaging.<\/p>\n<p>Once you open the package, you can store the tofu in an airtight container. Just pour enough water to fully submerge it and change the water daily. Uncooked tofu can be <a href=\"https:\/\/www.americastestkitchen.com\/articles\/7581-how-long-does-tofu-last-how-to-store\">stored for up to 5 days<\/a>, provided you change the water daily.<\/p>\n<p><strong>After cooking, tofu leftovers can last for 3\u20135 days in the refrigerator.<\/strong><\/p>\n<p>To extend the life of your tofu, you can freeze it in its original container (which means it might be embedded in a block of ice) or an airtight container.<\/p>\n<p><a href=\"https:\/\/www.foodnetwork.com\/how-to\/packages\/food-network-essentials\/can-you-freeze-tofu\">Freezing alters the texture of tofu<\/a>, which behaves differently after defrosting than when unfrozen. It tends to be chewier and more sponge-like, which I realize doesn\u2019t sound like a good thing. A classic way is to stir-fry chunks in a pan, using water or broth instead of oil. You can brown the tofu individually and set it aside, or toss it back into the <a href=\"\/xtrema-signatureskillet\">pan<\/a> or <a href=\"https:\/\/amzn.to\/2YLLEWk\">wok<\/a> later after you\u2019ve stir-fried some veggies first.<\/p>\n<p><strong>Tofu can be baked in the oven at 400 \u2109 (200 \u2103) for 15 minutes for a chewier texture.<\/strong> For a crispier texture, bake it for 25\u201335 minutes, depending on how hot your oven runs.
