Practical factors include the tropical climate, the rich but limited soil, and the proximity of fresh water and saltwater. These elements gave rise to the <strong>centrality of rice and seafood in local diets and the need to cultivate vegetables to provide the fiber and phytonutrients unavailable in white rice and fish.<\/strong><\/p>\n<p>Cultural factors include the influence of Buddhism, neighboring countries such as China, India, Thailand, and Cambodia, and the colonial French presence.<\/p>\n<p>From China, Vietnamese cuisine adopted the principle of yin and yang (known as <a href=\"https:\/\/www.vietnammonpaysnatal.fr\/culinary-art-am-thuc-cua-nguoi-viet\/\"><i>am<\/i> and <i>duong<\/i><\/a> in Vietnamese), as well as the five elements.<\/p>\n<p><a href=\"https:\/\/www.asianstudies.org\/publications\/eaa\/archives\/making-sense-of-vietnamese-cuisine\/\">Yin and yang<\/a> are understood as the central polarities of existence, two opposing energies whose combinations make up everything. Yin, or feminine energy, is dark, wet, and cold, while yang, or masculine energy, is hot, dry, and aggressive.<\/p>\n<p>Vietnamese cooks seek to balance the two energies in the meals they prepare, which are meant to balance the body and keep it healthy. The primary consideration is whether the ingredients in a dish are heating or cooling (not necessarily related to whether the dish is served hot or cold) and the weather in which it\u2019s eaten. <strong>An important Vietnamese food principle is <i>\u0102n theo m\u00f9a<\/i> (eating according to the season).<\/strong><\/p>\n<p>The five elements are wood, fire, earth, metal, and water. In terms of food, they correspond to several characteristics, including flavors, colors, senses, textures, and nutrients.<\/p>\n<h2>Regional Vietnamese Food<\/h2>\n<p><strong>Vietnamese cuisine comes from three main regions of the country: North, Central, and South.<\/strong> We asked Helen Le, Vietnamese cookbook author and creator of the blog <a href=\"https:\/\/helenrecipes.com\/home-en\/\">Helen\u2019s Recipes<\/a>, about regional Vietnamese food.<\/p>\n<p>Le says, <i>\u201c\u200b\u200bNorthern cuisine tends to be more delicate, light, and not too overpowering, focusing on the natural freshness of ingredients. It\u2019s not too spicy or greasy. A great example is Hanoi\u2019s famous ph\u1edf, which has a clear, non-oily broth.\u00a0<\/i><\/p>\n<p><i>Central Vietnamese food, especially from Hue, is known for its spicier, saltier flavors and its refined, small portions. For example, b\u00fan b\u00f2 Hu\u1ebf has a rich, spicy broth with layers of flavor.<\/i><\/p>\n<p><i>Southern cuisine is sweeter and makes use of coconut milk and palm sugar, which are readily available in the region. It\u2019s considered the <a href=\"https:\/\/www.scmp.com\/magazines\/post-magazine\/food-drink\/article\/3257922\/how-pho-vietnams-national-dish-evolving-and-why-chefs-wont-take-soup-makeover-too-far-original\">national dish<\/a> of Vietnam, even though it probably originates in a fusion of Vietnamese and French cuisine.<\/p>\n<h3>Protein<\/h3>\n<p>The main \u201cproteins\u201d in the Vietnamese diet are meats (beef, pork, and chicken), seafood (shellfish and finned fish), and tofu. You can expand the vegan options beyond tofu by cooking with meat alternatives such as:<\/p>\n<ul>\n<li><a href=\"\/blog\/mushrooms-nutrition-benefits-risks\/\">Mushrooms<\/a><\/li>\n<li><a Plus, we use a lot of mushrooms, tofu, and fresh herbs, all of which are perfect for vegan cooking.\u201d<\/i><\/p>\n<p>Many dishes can easily be made plant-based by substituting plant-based protein or just omitting meat and seafood.<\/p>\n<p>Le also had advice about veganizing condiments like fish sauce:<\/p>\n<p><i>\u201cTo replace fish sauce, I often use soy sauce or create a special sauce using dried shiitake mushroom soaking water, kombu seaweed, pineapple, rock sugar, and salt. This recipe is detailed in my book Vegan Vietnamese. The kombu and mushrooms provide that umami depth, making the dish more flavorful.\u00a0<\/i><\/p>\n<p><i>For stronger sauces like shrimp paste or fermented seafood sauces, I substitute with fermented tofu (chao) or fermented soybean paste. Coconut milk also works as a great alternative to animal-based fats.\u201d<\/i><\/p>\n<p><strong>If you\u2019re dining out inf Vietnam, use the phrase \u201cKh\u00f4ng n\u01b0\u1edbc m\u1eafm\u201d (pronounced hone-nook-mahm), which translates to \u201cNo fish sauce\u201d when ordering in a restaurant.<\/strong><\/p>\n<p>Vietnamese cuisine involves a fair amount of stir-frying.
