Examining Their Pros and Cons"},"content":{"rendered":"<p>One of my favorite fun facts is that it took over 40 years after the <a href=\"https:\/\/historyfacts.com\/science-industry\/fact\/canned-food-was-invented-for-military-use-but-soldiers-had-to-cut-cans-open-with-bayonets\/\">invention of the tin can<\/a> for someone to come up with the can opener. A French chef, Nicolas Appert, discovered how to preserve food in airtight containers; first glass, then tin-lined iron. These cans turned out to solve the problem of how to feed Napoleon\u2019s troops as they marched across Europe and his sailors as they <a href=\"https:\/\/www.history.com\/articles\/what-it-says-on-the-tin-a-brief-history-of-canned-food\">cruised the Caribbean<\/a>.<\/p>\n<p>The problem was that there was no easy way to get the food out. So French soldiers ended up stabbing the cans with knives and bayonets (and sometimes shooting them with rifles) to access their dinner. Not very safe \u2014 or hygienic.<\/p>\n<p>These days, with the advent of manual and electric can openers and pop-top lids, canned food often beats fresh when it comes to ease, convenience, and sometimes even <a href=\"\/blog\/food-safety-guide\/\">food safety<\/a>. But what about nutrition? Are canned foods good or bad for you? How do you best store them? Just as the processing of French military rations made them last longer, <a href=\"https:\/\/gaftp.epa.gov\/ap42\/ch09\/s081\/final\/c9s081_aug1985.pdf\">modern canning practices<\/a> preserve otherwise perishable foods.<\/p>\n<p>This allows them to be shipped over long distances without wilting or spoiling and makes them shelf-stable for months, if not years or even decades.<\/p>\n<p>Some canned foods are ultra-processed (think Spam and SpaghettiOs). But other canned foods, such as tomatoes and beans, are considered <a href=\"https:\/\/ucanr.edu\/sites\/kingscounty\/files\/19188.pdf\">minimally processed<\/a> foods.<\/p>\n<p>The UN Food and Agriculture Organization\u2019s NOVA classification system lumps unprocessed and minimally processed foods together, <a href=\"https:\/\/www.nature.com\/articles\/s41430-022-01099-1\">defining the category<\/a> as \u201cedible parts of plants or animals that have been taken straight from nature or that have been minimally modified\/preserved.\u201d These foods retain most of their original nutritional value and are often preserved using simple methods like water, brine, or natural juices.<\/p>\n<p>So canned foods can range from highly processed convenience products to wholesome, minimally altered staple foods. Understanding this range helps clarify that &#8220;canned food&#8221; doesn\u2019t automatically equate to unhealthy.<\/p>\n<h4><b>Are Canned Foods Good for You?<\/b><\/h4>\n<p>Let\u2019s start with the other benefits of canned food before exploring whether it offers any nutritional advantages.<\/p>\n<p>Canned food is convenient. Much of it is ready-to-prepare (or even ready-to-eat, if you picture people eating beans or canned chili by a campfire).<\/p>\n<p>Food that\u2019s been canned lasts a really long time. Many canned products have a shelf life of one to five years, which helps minimize food waste.<\/p>\n<p>And canned food is cost-effective, too. The fact that it doesn\u2019t need to be transported or stored in a fridge or freezer translates into real savings for the consumer.<\/p>\n<p>When seasonal produce isn\u2019t available, canned food can offer year-round variety to your diet. This can fill food and nutrient gaps in regions where growing a wide variety of foods is difficult.<\/p>\n<p>Now, let\u2019s talk about canned food nutrition. On the positive side, fruits and vegetables are often picked at peak ripeness and <a href=\"https:\/\/www.eatright.org\/food\/planning\/smart-shopping\/are-canned-foods-nutritious-for-my-family\">canned<\/a> shortly after harvesting. And the modern canning process leaves many nutrients, including minerals, fat-soluble vitamins, protein, fat, and carbohydrates relatively unchanged. What\u2019s more, the heating process may increase the bioavailability of some antioxidants, such as <a href=\"\/blog\/lycopene-benefits-foods\/\">lycopene<\/a> in tomatoes.<\/p>\n<p>This means that canned foods can provide nutritious options for a balanced diet. A <a href=\"https:\/\/ucanr.edu\/sites\/kingscounty\/files\/19188.pdf\">2007 study<\/a> compared frozen, fresh, and canned foods and found that all three offered comparable nutritional benefits. I know many people who, to this day, hate peas, green beans, and spinach because their first exposure to these wonderful veggies was from a can.<\/p>\n<p>And while many nutrients remain, <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC7824742\/\">water-soluble vitamins may be lost<\/a> due to the high heat required to kill pathogens during the canning process. That means you may get fewer of these vitamins, including the all-important C and B vitamins.<\/p>\n<p>Plus, to restate the obvious, not all canned foods are healthy. Some are obviously ultra-processed. Exhibit A: May I present <a href=\"https:\/\/www.chowhound.com\/1553928\/what-is-canned-cheeseburger\">Cheeseburger in a Can<\/a>?<\/p>\n<p>But even healthy-sounding items, like baked beans, may be swimming in a puddle of added sugar, salt, and preservatives.<\/p>\n<p><strong>If you\u2019re canning your own food, there\u2019s also the risk of mold growth or bacterial contamination.<\/strong> Make sure to follow <a href=\"https:\/\/nchfp.uga.edu\/how\/can\/general-information\/ensuring-safe-canned-foods\/\">home canning guidelines<\/a> to avoid foodborne illness.<\/p>\n<p>And while commercially canned foods are highly unlikely to give you botulism or salmonella, there are some real concerns about packaging safety. The <a href=\"https:\/\/www.ewg.org\/news-insights\/news\/bpa-update-tracking-canned-food-phaseout\">BPA linings<\/a> of traditional cans, <a href=\"https:\/\/wwwn.cdc.gov\/tsp\/phs\/phs.aspx?phsid=1076&amp;toxid=34#:~:text=Oral%20exposure%20to%20aluminum%20is,that%20aluminum%20causes%20Alzheimer's%20disease.\">exposure to aluminum<\/a>, and potential leaching of other <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34583591\/\">chemical contaminants<\/a> used in can linings have been linked to health problems.<\/p>\n<h4><b>BPA and Canned Foods<\/b><\/h4>\n<p>When people talk about canned foods, BPA is one of the top concerns. Modern <a href=\"https:\/\/www.ecocenter.org\/food-can-study-2016-frequently-asked-questions\">aluminum cans<\/a> typically have a lining to prevent corrosion, changes in taste, and bacterial contamination. For decades, one of the most common can linings contained a plastic chemical called BPA (short for bisphenol A).<\/p>\n<p>The CDC\u2019s 2008 National Health and Nutrition Examination Survey <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18197297\/\">revealed<\/a> that <strong>over 90% of US consumers had detectable BPA in their urine.<\/strong> This finding sparked a flurry of research into whether this stuff was harming us.<\/p>\n<p>Here\u2019s what we\u2019ve learned: <strong>BPA that leaches into foods and drinks from BPA-lined cans is an <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC6864600\/\">endocrine disruptor<\/a> and may even <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC6864600\/\">contribute to cancer development<\/a><\/strong>. BPA exposure may also be linked to behavioral problems in children. Furthermore, some research points to a potential connection between BPA and type 2 diabetes and even <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC9326625\/\">heart disease<\/a>.<\/p>\n<p>As a result, many canned food manufacturers say they have gradually phased out BPA linings. A trade group for the canned food industry claims that most cans <a href=\"https:\/\/www.cancentral.com\/innovations-food-cans\/\">do not contain BPA anymore<\/a>. But recent studies have concluded that it\u2019s <a href=\"https:\/\/www.prnewswire.com\/news-releases\/new-testing-finds-high-levels-of-bpa-in-coconut-water-302290557.html\">still in use<\/a> and exposes people to harmful health effects. As a result, the European Commission recently <a href=\"https:\/\/www.food-safety.com\/articles\/10023-eu-officially-adopts-ban-on-bpa-in-all-food-contact-materials\">banned BPA<\/a> in food-contact packaging.<\/p>\n<p>Although many BPA-free alternatives are now in use, the long-term safety of <a href=\"https:\/\/ceh.org\/yourhealth\/is-canned-food-safe-from-bpa-now\/\">alternative can-lining materials<\/a> \u2014 including acrylic, polyester, PVC (polyvinyl chloride), and oleoresins \u2014 is still being studied. Some researchers <a href=\"https:\/\/chemtrust.org\/bisphenol-a-bpa\/\">suggest<\/a> that some of these alternatives could also leach endocrine-disrupting chemicals into food.<\/p>\n<p>One promising replacement for BPA, <a href=\"https:\/\/ireadlabelsforyou.com\/bpa-free-cans-safe-or-toxic\/\">oleoresinous enamel<\/a>, is a mixture of oil and resin extracted from plants such as pine or balsam fir. It could be the safest option (although more study is needed). Instead, get these foods in a glass container or choose frozen options.<\/li>\n<li>Reduce your exposure to BPA and other potentially harmful chemicals by including a variety of fresh and frozen foods in addition to canned.<\/li>\n<li><strong>Look for low-sodium, no-salt-added, and no-added-sugar options.<\/strong> Opt for fruit canned in its juice or water instead of syrup. Choose savory foods canned in water or brine rather than oil.<\/li>\n<li><strong>Look for <a href=\"\/blog\/organic-food-prices\/\">organic canned foods<\/a> t<\/strong>o minimize your consumption of pesticides and additives.<\/li>\n<li>Avoid dented, rusted, or otherwise damaged cans to prevent bacterial contamination.<\/li>\n<\/ul>\n<h4><b>How To Store Canned Foods<\/b><\/h4>\n<p><a href=\"https:\/\/extension.umn.edu\/preserving-and-preparing\/storing-canned-food\">Store canned goods<\/a> in a cool, dry place where the temperature is below 85 F (50\u201370 F is ideal). For you metric folks, that\u2019s below 30 C, with 10\u201321 C as the sweet spot.<\/p>\n<p>Practice the FIFO rule. No, this has nothing to do with an international soccer federation. It stands for \u201cFirst In, First Out,\u201d meaning you use the oldest cans first rather than letting them gather dust in the back of your pantry. And abide by the \u201cbest by\u201d date stamped on the can.<\/p>\n<p>Store unused food from a can in an airtight container in the refrigerator or freezer, not in the original can. Why? Because once opened, the metal from the can may leach into the food and affect its taste, quality, and safety.<\/p>\n<p>According to <a href=\"https:\/\/www.foodrepublic.com\/1469837\/best-place-store-leftover-canned-tomatoes\/\">Food Republic<\/a>, leftover canned beans and coconut milk can be stored in the freezer for up to <a href=\"https:\/\/fruitsandveggies.org\/expert-advice\/can-canned-black-beans-frozen\/\">6 months<\/a>. Thanks to their high acidity, leftover canned tomatoes can be stored in the freezer for up to a year.<\/p>\n<h4><b>Best Practices for Incorporating Whole Canned Foods into Your Diet<\/b><\/h4>\n<figure id=\"attachment_61358\" aria-describedby=\"caption-attachment-61358\" style=\"width: 1254px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-61358\" src=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1284001970.jpg\" alt=\"Aquafaba, chickpea water brine draining. If a canned food is high in sodium, it\u2019s a good idea to rinse and drain it using a colander or sieve \u2014 especially if you\u2019re on a sodium-restricted diet.<\/p>\n<p>If the sodium content is low (you can check the label \u2014 the US Food and Drug Administration <a href=\"https:\/\/www.fda.gov\/food\/nutrition-education-resources-materials\/sodium-your-diet\">considers<\/a> anything below 140 grams of sodium per serving to be \u201clow sodium\u201d), you may want to include the canned liquid in your cooking. Doing so can minimize food waste while enhancing the flavors in a dish.<\/p>\n<p><a href=\"https:\/\/www.treehugger.com\/cooking-and-canned-liquids-you-shouldnt-toss-4864210\">The liquid from canned beans<\/a> is starchy and can be used as a thickening agent for soups, stews, and sauces, and even as a substitute for broth. The liquid from canned chickpeas, in particular, (also known as aquafaba \u2014 \u201cbean water\u201d in Italian), can be used to make vegan meringue-style toppings for desserts or as an egg white <a href=\"\/blog\/vegan-substitutions-for-cooking-baking\/\">substitute in baking<\/a>.<\/p>\n<p>Another reason not to drain away the liquid in cans is that it may contain water-soluble vitamins and minerals that would otherwise be lost. The liquid from canned vegetables and beans can be stored in a glass jar in the refrigerator for up to three days or frozen for up to three months.<\/p>\n<p>Pair canned foods with fresh foods to balance nutrition, flavors, and textures. For example, canned beans and beets go well in a fresh green salad. You can also use canned veggies, beans, and fruits in soups, stews, grain bowls, and smoothies.<\/p>\n<h4><b>Recipes Using Canned Foods<\/b><\/h4>\n<p>Canned foods don\u2019t have to mean compromise.
