And advocates of diets that are high in saturated fat have achieved political and policymaking power in the United States. Recently, they\u2019ve been <a href=\"https:\/\/thehill.com\/opinion\/healthcare\/5649677-the-war-on-saturated-fat-never-based-on-good-science-can-now-end\/\">lobbying<\/a> the US Government and major health authorities to end the \u201cwar on saturated fat\u201d and to abandon the long-standing recommendation to limit such fats to <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/books\/NBK588575\/\">less than 10% of daily calories<\/a> (a recommendation that two-thirds of the population already ignores).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">They\u2019ve had mixed success, as shown in the <a href=\"https:\/\/cdn.realfood.gov\/DGA.pdf\">2025-2030 Dietary Guidelines for Americans<\/a>, released by the USDA in early January 2025. US Health and Human Services Secretary Robert F Kennedy, Jr., presented the guidelines to the press by proclaiming, \u201cWe are ending the war on saturated fats.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The key visual \u2014 an inverted pyramid \u2014 appears to make good on that promise by prominently featuring a raw steak, a hunk of cheese, a pan of ground beef, and a carton of whole milk at the top left.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"870\" src=\"https:\/\/foodrevolution.org\/\/shared\/www\/www.foodrevolution.org\/html\/wp-content\/uploads\/image-1024x870.png\" alt=\"\" class=\"wp-image-64083\" srcset=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1024,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/image-1024x870.png 1024w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=300,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/image-300x255.png 300w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=768,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/image-768x652.png 768w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1536,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/image-1536x1305.png 1536w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1600,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/image.png 1600w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">At the same time, the document text features the exact same guideline as before: \u201cIn general, saturated fat consumption should not exceed 10% of total daily calories.\u201d The only wiggle room comes in the form of uncertainty: \u201cMore high-quality research is needed to determine which types of dietary fats best support long-term health.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And nutrition experts <a href=\"https:\/\/www.youtube.com\/watch?v=yvaxrSY9oe8\">have pointed out<\/a> that if you follow the recommended daily servings supplement, you\u2019re going to be consuming a lot more than 10% of your calories from saturated fat.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The inconsistencies remind me of the days of billboard ads for cigarettes that featured beautiful and healthy people next to warnings of disease, disability, and premature death. Confusion is a key strategy employed by those peddling harmful products \u2014 and the letter introducing the guidelines makes it clear in whose interests they were crafted: \u201cWe are realigning our food system to support American farmers, ranchers, and companies who grow and produce real food\u2026\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With so much noise, it\u2019s no wonder many people feel stuck between the warnings and the hype. So let\u2019s slow down, ignore the pundits, proselytizers, and policymakers, and look at what seven decades of science actually show.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let\u2019s start by understanding what saturated fat is, and how it differs from other kinds of fat (and how various types of saturated fat differ from each other). In contrast, unsaturated fats \u2014 like those in olive oil, flax, walnuts, and avocados \u2014 have one or more double bonds, are usually liquid at room temperature, and have been shown to <a href=\"https:\/\/www.ahajournals.org\/doi\/10.1161\/CIR.0000000000000510\">support healthier cholesterol levels<\/a> when they replace saturated fats in the diet.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Types of Saturated Fat<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Saturated fatty acids come in different lengths, and that <a href=\"https:\/\/www.frontiersin.org\/journals\/nutrition\/articles\/10.3389\/fnut.2023.1208047\/full\">makes a big difference<\/a> in how they behave in the body.<\/strong> Short-chain fatty acids are mainly produced when gut microbes ferment fiber in the colon, though small amounts are found in fermented foods like yogurt and kefir. Like all fats, saturated fat contains 9 calories per gram, which is more than double the energy density of carbohydrates and protein.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saturated fat <a href=\"https:\/\/www.acc.org\/latest-in-cardiology\/ten-points-to-remember\/2017\/06\/26\/11\/39\/aha-presidential-advisory-on-dietary-fats-and-cvd\">affects blood lipids<\/a>, including amounts and ratios of cholesterol. Specifically, it raises LDL (\u201cbad\u201d) cholesterol by decreasing LDL receptor activity in the liver. Here\u2019s why: short- and medium-chain saturated fats are absorbed more directly and oxidized faster; long-chain fats need bile salts and micelles (tiny, spherical structures that ferry fatty substances from your digestive tract into the absorptive cells lining your small intestines).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The <a href=\"https:\/\/ajcn.nutrition.org\/article\/S0002-9165%2823%2901670-2\/fulltext\">composition of the meal<\/a> containing the saturated fat also affects how the fat is metabolized by the body. <a href=\"https:\/\/foodrevolution.org\/blog\/why-is-fiber-good-for-you\/\">Fiber-rich foods<\/a> can reduce fat absorption and blunt lipid spikes; refined carbs alongside saturated fat may worsen lipid\/insulin responses.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>How you prepare the food \u2014 or how it was prepared before it got to your kitchen \u2014 also makes a difference. <\/strong><a href=\"https:\/\/www.mdpi.com\/2072-6643\/16\/11\/1738\">Ultra-processing<\/a> can increase how rapidly your body digests and absorbs saturated fat. These altered molecules make saturated fats even harder on your heart by driving up LDL cholesterol and speeding up the buildup of plaque in your arteries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are also <a href=\"https:\/\/www.cell.com\/cell-host-microbe\/fulltext\/S1931-3128%2823%2900034-3\">individual factors<\/a> that influence how saturated fat affects your body. These include your unique <a href=\"https:\/\/foodrevolution.org\/blog\/gut-health-recipes\/\">gut microbiome<\/a>, ability to produce bile, genetics (especially the genes that determine how your body deals with dietary lipids), and your overall metabolic health.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Is Saturated Fat Harmful? For example, some observational studies <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC8579104\">suggest<\/a> fermented dairy (mainly yogurt) may have neutral or slightly beneficial associations compared with other high-saturated-fat foods, though the mechanisms remain unclear and may relate to other components like probiotics or the food matrix rather than the saturated fat itself.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And certain types, like the medium-chain triglycerides (MCTs) found in coconut oil, are metabolized differently than the long-chain saturated fats common in animal and ultra-processed foods. Purified MCT oil may even have some benefits for weight, brain, and metabolic health, but the evidence for coconut oil itself is mixed \u2014 and it\u2019s not generally considered beneficial. So while not all saturated fat is equally harmful, most people benefit from cutting back, especially on the kinds found in processed and animal-based foods.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A growing body of leading medical and public health organizations now tells us that saturated fat should be limited in the diet and replaced with unsaturated fats (especially polyunsaturated fats) to reduce cardiovascular risk. The <a href=\"https:\/\/www.biologicaldiversity.org\/programs\/population_and_sustainability\/pdfs\/2025-recs-on-saturated-fat.pdf\"><em>Health Organizations\u2019 Recommendations on Saturated Fat<\/em><\/a> (2025) compiles current guidance from a veritable \u201cwho\u2019s who\u201d of authoritative health organizations, including the American Heart Association (AHA), World Health Organization (WHO), American College of Cardiology, Academy of Nutrition and Dietetics, American Diabetes Association, American Cancer Society, and American Medical Association, among others.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What\u2019s the evidence upon which these various organizations based their recommendations? It\u2019s a broad range of randomized trials, observational studies, and official policy statements, all pointing toward similar conclusions.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bottom line, the consensus is that reducing saturated fat and replacing it with unsaturated fats is associated with lower LDL cholesterol and reduced risk of cardiovascular disease.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What do they mean by \u201creducing\u201d? To what level, exactly? Many organizations, including the WHO and AHA, recommend saturated fat intake remain below 10% of total calories, with even lower limits (around 6%) for greater cardiovascular benefit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For example, on a 2,000-calorie diet, no more than about 6\u201310% of calories should come from saturated fat. That equals roughly 120\u2013200 calories per day, or about 13\u201322 grams of saturated fat, since fat provides 9 calories per gram. The alignment across cardiology, oncology, pediatrics, and global health communities underscores a shared message: keep saturated fat intake low and prioritize nutrient-dense, plant-based sources of unsaturated fat for improved health outcomes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Can you find studies that come to other conclusions? Absolutely. As we\u2019ve already seen, the type of saturated fat matters. And so does what it comes with and what it replaces. But the overwhelming preponderance of data, from thousands of studies published over many decades, is clear. People who eat less saturated fat, and especially if they <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20351774\/\">replace it<\/a> with polyunsaturated fats, tend to have a lower risk of <a href=\"https:\/\/www.cochranelibrary.com\/cdsr\/doi\/10.1002\/14651858.CD011737.pub3\/full\">cardiovascular disease<\/a> and <a href=\"https:\/\/diabetesjournals.org\/care\/article-abstract\/41\/8\/1732\/36380\/Saturated-Fat-Is-More-Metabolically-Harmful-for?redirectedFrom=fulltext\">type 2 diabetes<\/a>. In many modern diets, the highest contributors are <a href=\"https:\/\/nutritionsource.hsph.harvard.edu\/what-should-you-eat\/fats-and-cholesterol\/types-of-fat\">animal sources<\/a>, including red and processed meats, poultry skin, butter, cheese, whole-fat milk, cream, and ice cream.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As we\u2019ve seen, not all saturated fat is animal-derived; notable <a href=\"https:\/\/nutritionsource.hsph.harvard.edu\/what-should-you-eat\/fats-and-cholesterol\/types-of-fat\">plant-based exceptions<\/a> include coconut and coconut oil, palm oil and palm kernel oil, cocoa butter, and the vegan butters, cheeses, and pastries made with these tropical fats.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finally, and perhaps <a href=\"https:\/\/med.stanford.edu\/news\/insights\/2025\/07\/ultra-processed-food--five-things-to-know.html\">most concerningly,<\/a> processed and packaged foods \u2014 like pizza, burgers, cookies, chips, fast foods, and many frozen meals \u2014 often contribute heavily to diet-related disease due to a combo of saturated fat and high concentrations of refined starch and\/or sugar.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To round out the picture, be aware of where saturated fat often hides: in seemingly harmless items like coffee drinks, creamy sauces, snack bars, and nondairy creamers that use coconut or palm oils.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Beyond Personal Health: Environmental and Ethical Costs of Animal-Based Saturated Fat<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1254\" height=\"836\" src=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1470677566-1.jpg\" alt=\"\" class=\"wp-image-64076\" srcset=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1254,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1470677566-1.jpg 1254w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=300,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1470677566-1-300x200.jpg 300w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1024,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1470677566-1-1024x683.jpg 1024w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=768,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1470677566-1-768x512.jpg 768w\" sizes=\"auto, (max-width: 1254px) 100vw, 1254px\" \/><figcaption class=\"wp-element-caption\">istock.com\/Smederevac<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">So far, we\u2019ve been looking at the local effects of saturated fat; that is, what happens to the body that consumes it. But since most saturated fat comes from animal agriculture, it makes sense to look at the bigger picture, both from the perspective of planetary health and the ethics of how animals are raised for food.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Environmental Impacts of Large-Scale Animal Agriculture<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Animal agriculture, especially ruminant livestock like cattle, produces <a href=\"https:\/\/www.frontiersin.org\/journals\/sustainability\/articles\/10.3389\/frsus.2022.841106\/full\">significant greenhouse gases<\/a>, particularly methane, and is a major driver of the food system\u2019s climate impact. Beef and dairy are among the highest-carbon-emitting foods on a per-calorie or per-gram-of-protein basis.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beef, for example, <a href=\"https:\/\/ourworldindata.org\/explorers\/food-footprints\">generates<\/a> 10 times more emissions than pork or poultry and more than 100 times those of plant-based, protein-rich foods such as lentils or beans. What\u2019s more, grazing animals and feed crops like soy and corn require large areas of land. This contributes to habitat loss and biodiversity decline, including deforestation in some regions. Transitioning to a plant-based diet could <a href=\"https:\/\/www.peta2.com\/learn\/animal-agriculture-world-hunger\/\">reduce<\/a> agricultural land use by more than 75%, thereby freeing land for <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/37957399\/\">reforestation<\/a> and allowing ecosystems to begin repairing themselves. Such efforts could <a href=\"https:\/\/ourworldindata.org\/wild-mammals-birds-biomass\">sequester<\/a> an estimated 226 billion metric tons of carbon, one-third of the excess emissions since industrialization.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For more on the public and environmental health effects of animal agriculture, see my paper published in the <em>American Journal of Lifestyle Medicine<\/em>, <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC11863192\/\">here<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ethical Impacts of Large-Scale Animal Agriculture<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">As we\u2019ve seen, much of the saturated fat in modern diets comes from industrially raised animals (both meat and dairy). <a href=\"https:\/\/www.worldanimalprotection.org.au\/our-work\/factory-farming\/animal-cruelty\">Common welfare issues<\/a> include overcrowding, confinement systems, painful procedures, and shortened lifespans.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">An area where ethics and public health overlap in industrial animal agriculture is the use (I\u2019d say irresponsible overuse) of <a href=\"https:\/\/foodrevolution.org\/blog\/antibiotic-resistance-factory-farms\/\">antibiotics for growth promotion and disease prevention<\/a>. Not only does this allow animals to be raised under stressful, crowded conditions, but it also raises <a href=\"https:\/\/www.academia.edu\/43674600\/An_Ethical_Overview_of_Animal_Welfare_and_the_Use_of_Antibiotics\">public-health concerns<\/a> because it accelerates antibiotic resistance that affects humans and animals alike.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Additionally, animal agriculture undermines efforts to share food and other resources equitably across human populations. Cycling calories and protein through animals is <a href=\"https:\/\/www.frontiersin.org\/journals\/sustainability\/articles\/10.3389\/frsus.2022.841106\/full\">less resource-efficient<\/a> than producing them directly from plants. In a world where so many people go hungry, it\u2019s hard to defend using finite land and water to feed livestock instead of directly nourishing people.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since the largest dietary sources of saturated fat are animal-based foods, strategies that reduce saturated fat by shifting toward whole-plant fats and proteins can support both cardiometabolic health and planetary and ethical goals.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Practical Ways to Cut Back Without Feeling Deprived<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1254\" height=\"836\" src=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1132694350.jpg\" alt=\"\" class=\"wp-image-64073\" srcset=\"https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1254,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1132694350.jpg 1254w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=300,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1132694350-300x200.jpg 300w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=1024,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1132694350-1024x683.jpg 1024w, https:\/\/cdn.foodrevolution.org\/cdn-cgi\/image\/width=768,quality=75,format=auto\/foodrevolution.org\/wp-content\/uploads\/iStock-1132694350-768x512.jpg 768w\" sizes=\"auto, (max-width: 1254px) 100vw, 1254px\" \/><figcaption class=\"wp-element-caption\">istock.com\/tbralnina<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">If you want to adhere to the guidelines that recommend keeping your saturated fat intake below 10% of calories (and ideally, under 6%), <a href=\"https:\/\/www.dietaryguidelines.gov\/sites\/default\/files\/2024-12\/Scientific_Report_of_the_2025_Dietary_Guidelines_Advisory_Committee_508c.pdf\">one simple strategy<\/a> is to replace those calories with unsaturated fats rather than refined carbs.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here are some practical swaps to do just that:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Use <a href=\"https:\/\/foodrevolution.org\/blog\/olives-and-olive-oil-benefits\/\">olive<\/a>, avocado, <a href=\"https:\/\/foodrevolution.org\/blog\/what-are-seed-oils\/\">canola, or safflower oil<\/a> instead of <a href=\"https:\/\/www.verywellhealth.com\/vegan-butter-vs-regular-butter-11838455\">butter<\/a>, ghee, <a href=\"https:\/\/foodrevolution.org\/blog\/coconut-health-benefits\/\">coconut<\/a>, or <a href=\"https:\/\/foodrevolution.org\/blog\/palm-oil-facts\/\">palm oils<\/a>.<\/li>\n\n\n\n<li>Choose <a href=\"https:\/\/foodrevolution.org\/blog\/how-to-cook-beans-and-lentils-from-scratch\/\">beans, lentils<\/a>, <a href=\"https:\/\/foodrevolution.org\/blog\/how-to-cook-tofu\/\">tofu<\/a>\/<a href=\"https:\/\/foodrevolution.org\/blog\/what-is-tempeh\/\">tempeh<\/a>, or (if it aligns with your ethics) fish in place of fatty red\/processed meats.<\/li>\n\n\n\n<li>Pick <a href=\"https:\/\/foodrevolution.org\/blog\/nut-and-seed-butter\/\">nuts\/seeds and nut butters<\/a> as \u201cfat sources,\u201d not pastries or chips.<\/li>\n\n\n\n<li>Try <a href=\"https:\/\/foodrevolution.org\/blog\/milk-substitutes\/\">plant-based dairy alternatives made from soy, hemp, oats, or almonds<\/a>, without coconut\/palm oil as the main fat.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">And here\u2019s a quick list of cooking and meal ideas:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Achieve creamy textures without using cream by blending white beans, silken tofu, cashews, or cauliflower pur\u00e9e.<\/li>\n\n\n\n<li>Try a \u201croast and drizzle\u201d approach: roast veggies with little or no oil, then finish with extra-virgin olive oil and lemon\/herbs.<\/li>\n\n\n\n<li>Batch-create whole-food <a href=\"https:\/\/foodrevolution.org\/blog\/healthy-homemade-sauces\/\">sauces<\/a> (tomato-lentil, mushroom-walnut, tahini-lemon).<\/li>\n\n\n\n<li>Snack on crunchy baked chickpeas or kale chips in place of potato chips.<\/li>\n\n\n\n<li>Enjoy a plant-powered smoothie bowl made with frozen fruit and plant-based yogurt in place of ice cream.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Recipes<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Get ready to dig into these three low-saturated-fat recipes that bring big flavor and satisfying textures to the table.
